Over the Rainbow Chicken Wrap (Recipe)

Servings - 1 (4-6 Samples)
Time - 15-20 Minutes


Ingredients

1 Spinach Wrap

1 Chicken breast tender, 3 oz., pre-cooked (or uncooked if working with

older students)

1/4 Cup Broccoli slaw, (packaged) chopped fine using plastic chef knives

2 Tablespoons Pineapple chunks in 100% juice, drained

1 Tablespoon Light Mayonnaise

1 Teaspoon Apple Cider Vinegar

1/2 Teaspoon Sugar or Stevia to Taste

1/4 Teaspoon Poppy Seeds


Directions

If chicken is uncooked, season both sides with salt & pepper and cook on a griddle or pan at 350 degrees until both sides are brown and there is no pink left in the middle.

Transfer to a paper plate to cool and break or cut into small bite-sized pieces.

Meanwhile in a bowl, mix the dressing ingredients, broccoli slaw and pineapple chunks to coat evenly.

Lay tortilla flat and spread with slaw mixture.

Place cooked chicken pieces on slaw on one end and slowly roll, tucking in ends as you go. You may use toothpicks to help hold in place.

Cut wrap on a diagonal to serve.
